Ingredients

  • 1 sheet feuille de brick (Fillo dough)
  • 2 eggs
  • 1/4 avocado, sliced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tbsp extra virgin olive oil
  • Salsa (optional, for serving)
  • Prepare the base: Place a sheet of feuille de brick in a pan over medium heat. Let it warm for about 30 seconds.
  • Add the fillings: Crack two eggs onto the dough and sprinkle with parsley and basil.
  • Fold into a wrap: As the edges crisp up, carefully fold the sides over the filling, creating a wrap.
  • Cook until golden: Drizzle with olive oil and cook for about 2 minutes on each side, or until crispy and golden.
  • Serve & enjoy: Remove from heat, add avocado slices, and serve with salsa if desired.
