Mango Brie Puff Pastries

Anglaise - Butter Puff Pastry - Mango

Ingredients

AT YOUR LOCAL GROCERY STORE
  • 1/2 cup Crème Anglaise
  • 1 Fresh Mango
Step 1
  • Thaw puff pastry for at least 24 hours to ensure that it is completely thawed. Portion the pastry into the desired shape: round or rectangular.
Step 2
  • Leaving a border of at least half an inch, poke with a pork and gently press the puff pastry. This gives you two textures once cooked. Place the puff pastry back into the fridge. This cooling process is very important and wil result in lighter, crispier puff pastries.
Step 3
  • Slice mangos, reserving the most uniform pieces for garnish. Mix the mango coulis and créam anglaise together and pour approximately 1/2 tbsp in the center part of the puff pastry. Next, add a piece of brie and palce fanned fruit on top of the cheese.
Step 4
  • Bake at 350° for 20-25 minutes or when the puff pastry has risen and become golden brown. Enjoy!
    CHEF TIPS: If you do not want to use the créam anglaise, you can substitute it for a mustard!
