Shrimp and Pineapple Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • 1. In a bowl, whisk together soy sauce, honey, lime juice, garlic, ginger, salt, and pepper.
  • 2. Add the shrimp to the marinade and toss to coat. Marinate in the refrigerator for 15-30 minutes.
  • 3. Preheat the grill to medium-high heat.
  • 4. Thread the shrimp, pineapple chunks, and red bell pepper onto the skewers.
  • 5. Grill the skewers for 4-5 minutes on each side, until the shrimp are opaque and cooked through.
  • 6. Serve immediately.
